In my free time, I like to bake. IYKYK! On this page you will find pictures of some of my work, favorite cookbooks, and frequently requested recipes.
I've tried all kinds of things, but the current favorites are Cracker Beckies, Lemon cookies and Lemon Blueberry Scones.
The Fuller family's standard celebration cake is carrot cake with cream cheese frosting (made to look like roses). The friend favorite is lemon cupcakes (or cookies) with lemon cream cheese frosting. The Fuller boys like the homemade twinkies (yes, I own twinkie pans) and hostess cupcakes. Unlike the originals, my baked goods have a short shelf life.
Although I love home baking, I'm not a snob when it comes to baked goods. If you bought it and brought it, you are a winner in my book!
If you made a dessert that could be a contender for "Nailed It!", bring it! I love the effort and have personally made many "Nailed It!" contenders! I appreciate every "Man in the Arena" effort.
You may have an unexplored baking talent. Many Steele Elementary students of after school Cupcake Class know this to be true!
When I first shared this recipe, my extended family was concerned something must be wrong.

This is my original recipe created to have crunch, high fiber, great flavor, and have a low glycemic index. My family named them Cracker Beckies (many family recipes are now renamed to end in "Beckies").
I bring them to many events and have been asked for the recipe, so am sharing it here.
